Citrus Beef Ribbons

Cut: Tenderloin Roast
Preparation Time: 30 Minutes
Marinate Time: 2 - 4 hours
Cook Time: 10 minutes

Main Ingredients:

 4 lb. beef tenderloin, fully trimmed
 1 c. beef broth
 1/2 c. lime juice
 2 TBS. fresh ginger, grated
 2 TBS. sugar
 1 TBS. lime peel, grated
 Salt, to taste
 48 bamboo skewers

Directions:
  1. Partially freeze tenderloin for ease of handling. Slice beef into thin slices (about 1/4-inch) then cut slices in half. Place beef strips in a glass dish.
  2. Mix beef broth and next five ingredients. Pour over beef strips. Cover and refrigerate 2 to 4 hours, turning beef frequently. Drain marinade; reserve.
  3. Thread beef strips on bamboo skewers that have been soaked 30 minutes in cold water. Broil 1 to 1-1/2 minutes per side. Remove to heated platter.
  4. In small skillet, reduce marinade by boiling until slightly thickened. Pour sauce over skewered beef and garnish with lime slices. Makes 48 appetizers.
Recipe Tips:
  • Serve with small cocktail forks and plates or in a casual setting allow guests to eat off the skewers.
  • A sirloin steak could be substituted for the tenderloin.
  • For ultimate flavor, be sure to use fresh limes.
