Fiesta Ribeye Steaks

Main Ingredients:
4 ribeye steaks, cut 1/2-inch thick
2 TBS. fresh lime juice
8 flour tortillas, 6-inch
1/4 c. shredded Colby/Jack cheese
1 c. refrigerated salsa
Directions:
- Place steaks in a utility dish; sprinkle with half of lime juice. Turn steaks over and sprinkle with remaining lime juice.
- Wrap tortillas securely with heavy-duty aluminum foil.
- Place steaks on grid over medium coals. Grill steaks 7-9 minutes for rare (140 degrees) to medium (160 degrees), turning once.
- Place wrapped tortillas on outer edge of grid and heat 5 minutes, turning once.
- Top each steak with an equal amount of cheese. Serve with salsa and tortillas. Makes 4 servings.
Recipe Tips:
- Tenderloin steaks can be substituted for ribeye steaks.
- To add more Mexican flavor to your steaks sprinkle grilled steaks with chopped cilantro.
- Cut leftover steak into strips and wrap in tortillas for steak tacos.
