Grilled Beef Flank Steak with Wild Mushroom Salsa

Cut: Flank Steak
Preparation Time: 15 Minutes
Cook Time: 30 minutes

Main Ingredients:

 1 beef flank steak (1-1/2 to 2 pounds)
 
 Wild Mushroom Salsa:
 2 tablespoons olive oil
 1/4 cup chopped shallots
 2 tablespoons minced garlic
 1 tablespoon finely chopped jalapeno pepper
 2 cups sliced fresh shiitake mushrooms
 1 cup sliced button mushrooms
 1/2 cup diced red bell pepper
 2 tablespoons chopped fresh cilantro
 1 tablespoon fresh lime juice
 Salt and ground black pepper

Seasoning Ingredients:

 2 tablespoons mixed black, white, green and pink peppercorns or black peppercorns, cracked
 2 teaspoons olive oil
 1 teaspoon ground cumin

Directions:
  1. Combine seasoning ingredients; press evenly onto both sides of beef steak. Place steak on grid over medium, ash-covered coals. Grill, uncovered, 17 to 21 minutes for medium rare to medium doneness, turning occasionally.
  2. Meanwhile heat 2 tablespoons oil in large nonstick skillet over medium heat until hot. Add shallots, garlic and jalapeno pepper; cook and stir 1 to 2 minutes. Add mushrooms and bell pepper; cook and stir 5 to 6 minutes or until tender. Remove from heat; stir in cilantro, lime juice, salt and ground pepper, as desired.
  3. Carve steak across the grain into thin slices; spoon salsa over beef. Makes 6 servings.
Recipe Tips:
  • To crack peppercorns, seal in foodsafe plastic bag; crush to desired texture with rolling pin. Or, crush in mortar with pestle.
  • Broil Directions: Place steak on rack in broiler pan so surface of beef is 2 to 3 inches from heat. Broil 13 to 18 minutes for medium rare to medium doneness, turning once.
