Grilled Beef Quesadillas

Cut: Deli roast beef
Preparation Time: 20 Minutes
Cook Time: 5 minutes

Main Ingredients:

 3/4 lb. deli roast beef, thinly sliced
 1 1/2 c. prepared thick and chunky salsa
 1/4 c. fresh cilantro, chopped
 3 tbs. fresh lime juice
 1 c. canned black beans, rinsed, drained
 1/2 c. frozen whole corn kernals, defrosted
 8 medium flour tortillas (8 to 10 inch diameter)
 3 c. (12 ounces) Co-Jack cheese, shredded

Directions:
  1. In a medium bowl, combine salsa, cilantro and lime juice. In second bowl, combine 1/2 c. salsa mixture, beans and corn. Set aside remaining salsa mixture.
  2. Sprinkle cheese evenly on one side of each tortilla; divide beef evenly among tortillas. Top with scant 1/4 c. of bean mixture. Fold tortillas in half.
  3. Place quesadillas on grid over medium, ash-covered coals. Grill, uncovered, 4 to 5 minutes or until golden brown; turn once. Serve with reserved salsa mixture. Makes 8 quesadillas.
Recipe Tips:
  • If black beans are large, slightly mash before adding to salsa mixture.
  • Cooked stir fry strips may be substituted for the deli meat.
  • Add jalepenos and hot salsa to spice up your quesadillas.
  • To serve as an appetizer or snack: cut each quesadilla into 3 wedges.
