Skirt Steak Fajitas

Cut: Skirt Steak
Preparation Time: 5 Minutes
Cook Time: 20 minutes

Main Ingredients:

 1 pound beef skirt steak
 4 strips of bacon
 1 large onion, sliced
 1 green bell pepper, cut in strips
 4 ounces Mexican cheese, shredded
 4 small Fresh Made Tortillas
 
 Fresh Made Tortillas:
 2 cups instant masa harina (corn flour)
 1 teaspoon salt
 1 cup cold water

Directions:
  1. Grill steak to desired doneness, season with salt and pepper. Remove steak to cutting board, rest 5 minutes, and slice into thin strips.
  2. Cook bacon in large skillet, remove; add onion and pepper and saute in bacon fat until onion is soft. Return steak to skillet and mix with vegetables; top with cheese. When cheese melts, serve with tortillas, bacon and salsa. Makes 4 servings.
  3. To make tortillas: Combine masa harina and salt in a bowl; gradually pour in 1 cup water, stirring constantly. Knead mixture with hands, adding additional water if necessary, until dough becomes firm and no longer sticks to your fingers. Divide dough into 12 equal pieces and roll each piece into a ball. Roll out between 2 pieces of wax paper until very thin, or about 5 inches in diameter. Preheat an ungreased iron skillet over medium heat. Fry the tortillas, one at a time, for about 2 minutes per side, turning once. Makes 12 5-inch tortillas.
